Muso Miso Mugi is a traditional Japanese miso paste made from barley and soybeans. Due to its longer fermentation, it has a more pronounced flavor than white rice miso. It has been produced for centuries by weighing selected soybeans with stones and fermenting them in cedar barrels. Mugi miso is a medium-brown miso made from soybeans and barley, fermented for about a year. It is ideal for soups, sauces, marinades and for flavoring a variety of dishes that require a more intense flavor.
